What do you like about sparkling wine?

Sparkling wine is more than just a beverage, it’s synonymous with celebration and coming together. In the glass, the sparkle just adds this extra dimension that’s unmatched by still wines. Also, on the production side, you have to make each wine twice, once as a base wine, then again as a sparkling wine. It’s technical, its precise, but there’s so much finesse and artistry required.
